Ingredients:
4 chicken drumsticks (skin on)
2 Tbs extra virgin olive oil
1 lemon
1 tsp ground cumin
pinch of salt & pepper
2 carrots, chopped into sticks
1 red onion, chopped into wedges
4 baby beets, trimmed and chopped into quarters
2 kipfler potatoes, halved
6 whole garlic cloves (unpeeled)
Preheat oven to 220 degrees. Rub the cumin, 1 tbs olive oil, salt and pepper into skin of drumsticks. Squeeze a little lemon juice over drumsticks and place a slice of lemon on top of each one. Place into baking tray, add garlic and vegetables to pan. Pour remaining olive oil over vegetables & season. Place half a lemon into pan, once you take this out of the oven this will be soft and full of warm, delicous juice. Bake for approx 30-35 minutes or until vegetables are cooked. Remove from oven, squeeze lemon half over chicken and serve immediately! YUM!
